How do yuo set rules fro shipping

We just got an order on our site, and the ups charges were only 3.00. We lost some money on that order.......Can you change it to 7.95 for the first item and 3.00 for the next items ordered? Also, on that Ecommerce page, why don't we put our Mattress Safe Logo on there on each page. Someone emailed me and was trying to place an order and when he got to the ecommerce page , he was confused about if he was on our site still. Can we put our logo on it?
