If he moves to osCommerce can he use a layout similar to this whereby the user selects products before entering the cart?

Well it does have the facility to pick a product, display it and then the product can have lots of different attributes. That is the are you would have to work on to give it the functionality that this one has. You can have an attribute called _ Name, Color etc. and you can pick from drop down lists. I don't think the standard code lets you enter data but I am sure there are contributions that cater for it. Also I don't think that the standard code allows images but again maybe there is a contribution that does.

Yes I see this, just cannot find a way to have the contents of a product display outside of osCommerce and go into the catalog once the option to add to cart is chosen.

I think you would have to write you own php program to do that. I am sure it can be done. If you can't do it then I am sure you could get someone to do it for you on one of the freelance boards. PM me if you want to know more about that.
