Check this page out http://www.sitemaps.org/protocol.php
It explains alot about sitemap.
Please note that: <urlset xmlns="http://www.sitemaps.org/schemas/sitemap/0.9">, is like a template code, and shouldn't be modified.

SEO is much more than just a Google sitemap. oscbooks.com has a good ebook on it. There are many SEO threads in these forums as well.

How to go about SEO will also depend greatly on the market you are in. SEO for a local restaurant and SEO for a major credit card company are 2 totally different ballgames.
Do you consider yourself an expert in your field? If so, you may want to try writing some blogs that are pertinent to your website and link back to it, or create a blog section for your website. Always make sure you're providing worthwhile content in your blogs though, don't just write them to get a better page ranking.
Another thing people tend to over look, go and google your site, but input: "site:www.yoursite.com" into the search field. Now take a look at what it returns. Do you see anything that you may want to change about how your links look? Remember that you'll only have only a few seconds or less to make an impression.
