Tom,
I think your site has many positives. It has fixed width with a coloured background and has a great category tree menu and colour contrast buttons. It has lots of products so wish you success with your venture.
The things I would advise you to consider are as follows:
- The whole site is SSL protected. Every page that opens up is 'https' but apart from 'secure' pages everything should be http
- The idea behind the colour contrast is good. You have dark infobox headings backgrounds and light/silver add to cart etc buttons but all in all, please consider changing the colours.Try not to use dreary or dull colours when there are so many more colours that can be used to brighten up the site
- The header logo really needs to be more dynamic and eye catching. The corporate message is written in very dull colours
- The site could do with adding an SEO contribution too (so URLs end with .html etc) and furthermore you should add metatags because from what I can see, apart from the index.php page you have no metatags from keywords/description anywhere
- I have never been a big fan of stock oscommerce column left and column right sites. The site would look much better if the right column was taken out. You have so many pages on your site where apart from the usual two or three boxes in the right column the rest of the column in wasted sitting empty while customers scroll down reading items in the main text area or the left column. You should consider bringing the infoboxes you think are important over to the left column and remove the right column
In my opinion I think the site has lots of potential you need to modify it to make it look more professional. All the hard work has already been completed and that is a credit to you so if you put a little more effort in to it maybe adding the things mentioned above you might see a difference in sales and search engine rankings
- Finally, try adding 'justify' your text within admin when creating items for sale and space out teh bold from the other text. This is an example of why it needs spacing properly: PRODUCT INFO PAGE and an example of why you should justify your text and make it look neat is here: PRIVACY PAGE

From what I can see it is really very stock oscommerce with just some minor graphical changes.
To take the look of your store away from the stock oscommerce look you do not need to make full use all available options but using just a few can make huge improvements:
- I would suggest you using only one column and then to add fixed width with an outer background shade or image
- Also, I would suggest you adding an SEO contribution
- Finally, you should re-think the logo and header image area. You can always keep the same concept but just play around with various images and sizes
I could list more suggestions but these are the main ones...
