No I don't think that's it. Maybe there is nl2br somewhere?

Just added str_replace("<br/>"," ",$order->totals[$i]['title']) to remove the break tag, still can't find the code though.

Some of the details can be removed from the admin in the configuration under "Customer Details". To make some of the non-required fields required you will need to modify I believe form_check.js.php in the includes folder - some customization needed - unless there is a contribution that is out there.
