Do I need to keep the original Powered by and Copyright osCommerce in the footer once Ive modified the look of the store?

No...
Provided that you have changed the look of your cart and changed all the buttons/images - then you could put your own copywrite notice or whatever in the footer and remove everthing else. If you want HELP from the forum then this should remain (forum rules) - but can add to it.

IE:
Copywrite osCommerce
Customized by Xplod
Power by ocCommerce

However it is suggested (not required) that POWERED BY should remain - be proud of what you have done and show your apprecation where you got your excelent free software....
