While researching what all needs to be covered in making an e-commerce site, I found myself wondering where the information put under Shipping & Returns/ Privacy Notice/ Conditions of Use comes from. Does this have to come from a Lawyer that know's what your business needs to disclaim under each topic? Could the information just be made up by the person running the shop? Can you copy from other sites and make changes to your business such as names and specific terms? Is there a site that discusses this topic or that gives generic forms for anyone to use?

I have exactly the same doubts.
Is there a place where each of us can grab the most common content for Terms and Conditions, or are each shopper dependant of lawyers to write this content?
In any case, wouldn't it be good if here on the forum we could access and use common terms and conditions, and then detail each one for a specific country?
I still don't have "good enough" wording for the shops I'm putting online in Portugal, the best I managed to do so far was adding a Frequently Questions section. With this I can as time goes by and questions arise, update the content to better enlight the customers about specific things, such as privacy information, shopping conditions, and so on.
But I still search for a place where we can all contribute, allow others to pick up on the work we have done and continue with it, for any one that uses e-commerce platforms be able to inform about general conditions and stuff.

Each of these are company policy - no lawyer needed. This basically states what your intentions are in the case of certain situations. These may vary for what your business offer. You can use the basic ones that is in the contributions, however you should review them thoughly to make sure they apply to your business and that everthing is covered.
I have see these written up as 2 or 3 lines and other that are pages and pages long (must have been written by a lawyer - as can't make sence of it).
I would not "cut'n paste" some one elses documents - however studying them can give you the bases for making your own.
