My company was hosted by a mall of different stores, which hosted all the files, products, etc. Since I joined, we broke off and wanted to get the email database of our clients from that site.
They do have a legal obligation to do so, dont they?

They sure do - that data belongs to you - they cannot use it themselves in any shape or form unless you have agreed to (check your fineprint).

I reviewed it, we didn't agree to release the information to them in any way, shape or form. Are there any documents I could grab online to show them these? He is being quite difficult about it.

Just export the sql files and then import them into the new database with the new host?
