I would like to edit the standard emails sent when a customer signs up, orders, etc. However, I've not found the files responsible for describing email contents. Similarly, the invoice and packing slips sport the osC logo, I need to change thise as well.
Please point me to their location.

For the email text you will need to search through your languages files and find the text for the email that is sent at wherever you are in the cart process.
To edit your invoice and packinng slips look in their relevant files in both the catalog and the admin areas.

A little correction about the invoice, packing slip template. The logo was changed before I noticed. It's a little annoying that you can't edit the title of threads right after posting them. Oh well.
