Confused - Admin/Payment Module Problems

Hi,
We've just successfully installed Paypal and our tests in the Sandbox are all going fine - payment is being accepted and orders are being received. However I am a bit confused in the admin end of 2.3.1 which differs from 2.2.

When an order was received on 2.2, I had the option of moving the order status from 'Pending' to 'Processing' to 'Dispatched', but in 2.3.1.'Dispatched' has been changed to 'Delivered' Why is this and can it be changed? I can guarantee Dispatched but cannot guarantee Delivered!

Furthermore there are two additional options in the drop down menu which I don't understand - PayPal [Transactions] and Preparing [Paypal Standard] What do these mean?

Finally, when the order is received (payment in Sandbox accepted) it comes in, correctly, as Pending but below that the following text appears

PayPal [Transactions]
Payer Status: verified
Address Status: Unconfirmed

Payment Status: Pending
Payment Type: instant
Pending Reason: multicurrency
Reversal Code: None


Can anyone out there shed some light on this as I'm a bit confused!!

The delivered text can be changed if you log in to your admin go to localisation and click on order status. Click the status you wish to change then click edit on the right hand side of the page.
REMEMBER BACKUP, BACKUP AND BACKUP
I am not a coder, so dont bother sending PMs asking for help as you wont get any.  

OSC has a steep learning curve, but in general the program does work.  If it doesnt work, the chances are it is something you have done.

When you install the PayPal standard module that comes with 2.3.1 then it creates those statuses.

This status: Preparing [Paypal Standard]  is usually used for "incomplete" paypal orders. Ie. the customer does not complete the payment....

Why does it say:

Address status: Unconfirmed

...and how can this be fixed?
