I have installed a new theme using the method described in the post:
Designing New Themes the Easy Way. I have several problems in the check-out area and shopping cart. The word remove in the cart is black text so it does not show up, where is this text color defined? In the check out area where shipping "best way" is, there is a white bar, the yellow text does not show on white very well. Where is this defined? I am quite sure I will find more problems, but that is it for now, Any help will be greatly appreciated.

You will find those definitions in catalog/stylesheet.css. I suggest that you  use Firebug in Firefox or the debugger in Chrome. Right click on the problem and select "Inspect Element." That will tell you exactly where to find the CSS.
