in Product Info, Breadcrumb and also in the Product title heading in the Catalog.
Under Configuration in Admin - maximum/min values does not cover this.
There has to be a setting somewhere to modify this and this is a toughy for me in trying to find it.
Any ideas?

In the database, the maximum number of characters is set to 64, if you want to add more space, increase the products_name varchar(64) to something else.
