Hi
Originally I was running OSC 2.3.1 on a windows server but have changed to Linux and I have removed certain required fields from Customer info by editing the php file.
All customers prior to this change is listed under "customers" in admin, but I cannot edit them as the "date created" is missing. I had a look in customers via PhpMyAdmin and all their info is in the database.
What do I need to do to have them back as editable customers?
Hope it all makes sense to you.

Isn't your issue connected with what you did when "editing the php file" ?
I would say, undo your edits
