To create an account the store has a form that includes several fields that we wouldn't need and others that are "required".
How can I remove the fields I don't need and removed the "required" option to others?

Some of the details can be removed from the admin in the configuration under "Customer Details". To make some of the non-required fields required you will need to modify I believe form_check.js.php in the includes folder - some customization needed - unless there is a contribution that is out there.
