How do I disable shopping cart totally?

How do I disable the shopping cart totally? So the site just shows products and prices but you don't get to the shopping cart stage?

there is
enquiry cart
and
OSC catalog

I have not used either one, but they look like what you are asking.

How do I enable the cart from the enquiry cart????? I cannot figure it out!
